Has anyone seen an engineering study too determine an estimate of man-hours
 required for constructing a boat this size?

The ark's dimensions are about the same as a small naval destroyer. During
WWII  we  could build one in about half a year with hundreds working on it.
Civilian "Liberty ships" were built in less time on an assembly line, again
using hundreds of workers.  Such a ship has to be replenished every few
weeks. The upper limit on the capacity of a ship this size is about  4
thousand tons. I'm a member of the US Naval Institute and may be able to
find out more. If so I'll send an email. One thing is sure: the ark couldn't
have carried the world's
animals, much less fed them for a year.
